This week I signed Hoosier-land Homemaker up for a Pinterest account! If you’re a pinning Pro, you may know just how dangerous this task can pan out for a lot of us procrastinating dreamers, such as myself. I’m still working on setting up boards that I think would be beneficial to any/all homemakers but there is one ‘pin’ that I found and I knew I had to try it out.
Cheesy Bacon Potato Chips
This recipe calls for 3 actual ingredients (not counting the salt & pepper for taste). It bakes in 15 minutes and prep takes about 8-10 depending on your knife wielding skills.
*Let it be known that I followed the exact directions to the link. What you will notice in the photos is what I call a Partial Pinterest Fail. Meaning, the photos are not going to do this recipe any justice. It just does not look like the pin in the link above. I tried and in that respect I failed. BUT… even though it doesn’t look quite right, it is by far a fantastic dish. Even my “I don’t like potatoes.” kid ate it without complaints.
Onto the recipe!
Ingredients: {for a family of 5. The ingredients listed here are what I used.}
2 Potatoes (scrubbed clean & sliced to about 1/8th of inch thick)
Shredded Colby Jack
real Bacon bits
Salt/Pepper to taste
Directions:
Preheat oven to 375º. Spray a cookie sheet with cooking spray. Boil the potatoes in water for about 5 minutes, drain. Layer potatoes on the cookie sheet, overlap if need be. Lightly salt & pepper the potatoes then sprinkle on the cheese & bacon bits. Bake for 15 minutes.
As you can see, boiling the potatoes was probably not necessary. Perhaps I sliced them too thin or maybe the potatoes can go directly into the oven, either way the taste was amazing even though the visual is lacking Star Quality.
Conclusion:
This recipe will definitely be used again. I may switch it up a bit and if I do, I will let you know how that turns out. If you have made this before, please comment on what step I did incorrectly. Even if you haven’t made this, I’m sure there has been a pin that you have tried and it did not work out, let us know in the comments what that was. I’m eager to know.

This is certainly a different way of having potatoes, very creative. Maybe next time you could just boil them for half the time. 🙂

I think that’s what I’ll have to do. I’ve also been tossing around the idea of cutting the potatoes into cubes and mixing the cheese & bacon in with them then baking it all together. But something tells me that may be too dry of a dish.
